Why it happens

With one burner lit, flames look fine; with everything on, an undersized gas line lets pressure sag. Lower-tier ports clog first, so simmer fails while high heat looks healthy. Grease on an infrared charbroiler feeds lasting flare-ups, and a cracked burner face can leak gas. Griddle swings trace to the thermostat, its sensor contact or grease under the plate.

Why do my flames shrink when everything is on?

Usually the gas supply cannot keep up, especially on older or shared piping. If the rangetop checks out, you get pressure readings to hand to a gas plumber.

Is it normal for my charbroiler to flare up?

Brief flare-ups as fat drips are normal. Flames that persist after food is moved, or fire under the grate, mean grease buildup: turn it off, let it cool and clean the tray.

Should my French top be cooler at the edges?

Yes, that is the design: the center sits over the burner. Repair is needed when the center never gets properly hot, or the plate rocks or looks warped.
