Cause
Why it happens
A rangetop griddle holds temperature through a thermostat bulb; a kinked capillary or drifting thermostat makes it overheat or lag, and grease in its burner leaves a cold stripe. Under induction tops, generators rely on a fan pulling air through a gap; block it and zones cut out with a code. Repeated overheating ruins the generator.
What the technician does
- Leak-check gas connections; set burners by flame and manometer.
- Probe the griddle plate at several points against the dial.
- Run each induction zone at full power to prove the cooling fan.
- Inspect the cutout: side clearance, venting below and hood capture.
Call right away if
- Gas odor? Stop cooking, close the shutoff if safe. Strong odor: leave and call the gas utility or 911 from outside.
- A griddle climbing past its setting or smoking on a low dial.
- A grease fire or repeated large char-grill flare-ups.
Between visits
- Empty the char-grill tray and griddle trough often; most flare-ups start in a full tray.
- Never store anything against the vent gap under an induction top.
Repair or replace?
A gas cooktop or rangetop is mostly metal, valves and burners, nearly all serviceable. Electric and induction tops are closer calls: cracked glass or a failed generator on an older model with scarce parts can justify a new top.

Open or sealed burners: does it matter?
Yes. Open burners have removable heads, air shutters and a drip tray, so cleaning and shutter adjustment fix many flame problems. Sealed burners keep spills on top but expose the electrode to liquid.
What if my cooktop glass cracks?
Stop using it and switch off its breaker. The glass cannot be repaired, but on most Viking radiant and induction models it can be replaced as a part.
Why do my rangetop knobs get hot?
Some warmth near the griddle is expected. Knobs too hot to touch suggest tight side clearance, weak hood capture or a front burner rolling flame toward the panel. Over time that heat damages valves and switches.
